Healthy Peanut Butter Cookies (Only 2 Ingredients)

Some of my fondest childhood memories involve making cookies with my mom and grandma.

I loved peanut butter cookies the most, since it was my job to roll the dough and press the little cookie balls down with a fork to form that iconic striped peanut butter cookie look.

I love desserts that are quick, and these are some of the quickest.

Only two ingredients!

You don’t have to refrigerate the dough, but I recommend it because the dough can get quite soft (especially if your kitchen is warm).

The best part – aside from the speed – is that you can switch things up by adding up to ½ cup of chopped nuts, dried fruit, or even some dark chocolate.

Since these cookies are free from sugar, they should be safe for anyone on a gluten-free diet.
