Some of my fondest childhood memories involve making cookies with my mom and grandma.

I loved peanut butter cookies the most, since it was my job to roll the dough and press the little cookie balls down with a fork to form that iconic striped peanut butter cookie look.

You don’t have to refrigerate the dough, but I recommend it because the dough can get quite soft (especially if your kitchen is warm).

The best part – aside from the speed – is that you can switch things up by adding up to ½ cup of chopped nuts, dried fruit, or even some dark chocolate.

Since these cookies are free from sugar, they should be safe for anyone on a gluten-free diet.

Healthy Peanut Butter Cookies (No Added Sugar)

  1. 1 cup peanut butter
  2. 1 egg
  1. 1/2 cup chopped nuts, dried fruit or dark chocolate chips
  1. Heat oven to 325F and grease or line a baking tray.
  2. In a medium bowl, combine all ingredients and stir until smooth. Refrigerate for at least 30 minutes.
  3. Scoop 1-2 tablespoons of the dough at a time and roll into balls. Place the balls evenly spaced on the baking tray and flatten the tops with a fork.
  4. Bake for 10-15 minutes, until set and slightly golden brown. Allow to cool for a few minutes before removing to a wire rack.

    Would this work with any other nut butters ? Almond butter is sometimes runny, but I’m wondering if something like a sunflower seed butter would work.

    OMG! This recipe is really not! First of all, the writer throw around the word “dough” quite a bit, but there is no flour. Therefore there is NO Dough! Okay…that’s out of the way. Who really cares what she calls it? These cookies weren’t “cookies”! They were just blobs of peanut butter that were baked in the oven. I followed the recipe verbatim! They were a nice golden brown on top. I let them cool for 15 minutes and tried to move them to a cooling rack for the rest of the time. They fell apart. I’ve been baking for 30 years and was skeptical, but I thought that I’d give it a try. The writer seemed confident. I’d like to see a video of how she does it and prove that hers don’t crumble upon her touch as well. I’m not even mad. It’s only peanut butter and an egg. No big whoop, but what’s the point?

    Being sugar-free has nothing to do with being gluten-free. These are, indeed, gluten-free, but that’s just because they don’t contain wheat. Please don’t propagate misinformation.

    This recipe is horrible. The cookies crumble, u can’t even pick them up. They have no taste. I used a peanut coconut butter that has agave syrup but it still want good.

    i say use 1cup pb, 1cup sugar, and one egg mix til all combined, bake for 9-10 mins in 350 oven!!!!

    Not good. Very strong peanut butter taste. They really need a third ingredient to detract from the overpowering peanut butter.
